超声波辅助AOT反胶束体系后萃大豆蛋白的研究 被引量:9

摘要 研究超声波辅助反胶束体系(AOT/异辛烷)萃取大豆蛋白的后萃过程,并分析各因素对蛋白后萃率的影响,通过正交试验得到了AOT/异辛烷反胶束体系萃取全脂大豆粉中蛋白的最佳后萃工艺条件为:KCl浓度1.0mol/L、pH值7.0、超声功率为270W。在此条件下,蛋白质的后萃率为98.91%。 Studied the backward extraction of soybean protein by AOT reverse micelles system from full-fat soybean powder. The main factors of effect reverse miceUes extraction results had been analyzed and discussed. The effects of factors had been investigated orthogonal test design. The best technics of backward extraction was obtained. The results showed the optimal conditions of backward extraction protein were KCl 1. 0 mol/L, pH 7. 0, ultrasound power 270 W. And the protein backward extraction rate was about 98.91 %.
