食物不耐受与人体相关性疾病的研究 被引量：14

摘要 IgG介导的食物不耐受是过敏性疾病研究领域的新课题。英国营养协会将其定义为：对特定食物或食物成分的副作用，这些副作用包括免疫机制的过敏反应和酶缺乏、药理作用以及其它一些尚未定义的作用，不包括细菌、霉菌、病毒、化学毒物和主观厌恶某种食物的心理反应。因此，食物不耐受是一种复杂的变态反应性疾病，机体免疫系统把进入人体的某种或多种食物当成有害物质，从而针对这些物质产生过度的保护性免疫反应，产生食物特异性IgG抗体，这些IgG抗体与食物颗粒形成免疫复合物，可引起所有组织（包括血管）发生炎性反应，并表现为全身各系统的症状与疾病。对食物不耐受的研究和应用正在世界范围内迅速普及。
