摘要
测定了不同温度及不同pH条件下泥鳅(Misgurnus anguillicaudatus)肠道中蛋白酶、淀粉酶和脂肪酶的活性。结果表明,随温度、pH的升高,三种酶活性的变化均表现为先增高后降低。蛋白酶、淀粉酶、脂肪酶的最适温度分别为50℃、50℃、40℃,最适pH分别为7.0、7.0、7.5。
The protease, amylase and lipase activities in intestine of Misgurnus anguillicaudatus under the condition of different temperature and different pH were studied. The results showed that: with the increasing of temperature (20℃-65℃) and pH (6.0-9.5), the digestive enzymes' activities increased at first, then decreased. The optimum temperatures of the protease and amylase were 50℃, the lipase were 40℃. The optimum pH value ofprotease, amylase and lipase were 7.0, 7.0 and 7.5.
