摘要
文章对桃花红素受外界影响的稳定性进行了分析,考察了光照、温度、酸碱度、金属离子、氧化还原剂、食品添加剂等对其稳定性的影响。实验结果表明,桃花红素是一种稳定性良好的着色剂。
The stability of the red-peach blossom to the outside influence was analyzed. The influence of illumination, temperature, acidity and alkalinity, coherer ion, oxidant, reductant, food additive and so on were studied. The red-peach blossom pigment was regarded as a good colorant having a nicer stability and keeping color for quite long time with bright scene.
