摘要
利用白芥籽中的芥子酶对菜籽中的硫甙进行降解,讨论在不同温度(40℃、60℃、80℃),不同时间(10min,30min,50min)和不同水分含量(10%,20%,30%)条件下硫甙的残留量,并将酶解后硫甙残留量与酶解条件的关系用三元线性回归方程表示。根据回归方程求出最佳酶解条件为温度80℃,时间50min,水分含量30%,并预测此条件下酶解后的菜籽粉中硫甙的含量为0.47%(无油干基)。
The glucosinolate in rapeseed can be hydrolyzed by thioglucosidase.The amount of glucosinolate residues are different at diffrent temperatures (40℃,60℃and 80℃),different hydrolysis time (10 min,30min and 50min) and different moisture content (10%,20% and 30%).This Can be expressed by regression equation,According to this relation,the optimal hydrolysis condition is 89℃/50min and 32% moisture.At this condition the glucosinolate content after enzymolysis is 0.47% (based on dry,defatted meal).
