Determination the anthocyanin content in Yan73 grape by pH-differential method

摘要 烟73葡萄是酿酒调色葡萄中的优良品种,其果皮和果肉均呈现紫色,实验用63%的乙醇提取烟73葡萄皮及果肉中的色素,经大孔吸附树脂HPD-100A纯化后通过紫外可见光谱及化学分析法对其进行定性分析,确定为花青素类,并利用pH示差法测定其含量,结果显示,烟73葡萄皮及果肉中总花青素含量高达313.9 mg/100 g。 Yan 73 is a fine vintage toning variety of grape. Its skin and pulp present pu-rple. We extracted the pigments in Yan 73 skin and pulp by 63% EtOH, purified by m-acroporous resin (HPD-100A). The pigments are indentified by UV-vis spectra and ehemieal method. Its total eon- eentration is determined by pH-differential method. The result shows that the pigments in Yah 73 skin and pulp are anthoeyanin. Its total eonee-ntration reach 313.9mg/100g.
