散装酱腌菜总砷、铅及亚硝酸盐含量的安全性评价 被引量:10

摘要 随机收集中山市市售散装酱腌菜,包括萝卜类、头菜类、榨菜类、汕头咸菜类、雪菜类、梅菜类、青瓜类、辣椒类和杂类酱腌菜共143份样品,进行总砷、铅和亚硝酸盐含量的检测。结果表明:中山市市售散装酱腌菜全部检出总砷、铅和亚硝酸盐,参照《GB2714-2003酱腌菜卫生标准》合格率为100%,说明国家对酱腌菜产品实施质量安全市场准入制度,促使酱腌菜企业确保生产必备条件及规范企业管理,从而整体提高了酱腌菜的质量水平。 143 samples of unpackaged preserved vegetables including radish, toucai, preserved szechuan pickle, salted vegetables of Shantou, xuecai, meicai, cucumber, capsicum, hodgepodge sold in Zhongshan market were collected at random. The contents of Arsenic, Plumbum and nitrite in samples were tested. The results showed that Arsenic, Plumbum and nitrite were found in all samples, but they were 100% in accord with the national standard 〈GB2714-2003 Hygienic Standard for Preserved Vegetables〉. It is obvious that the rule of quality safety on preserved vegetables can accelerate the enterprise to guarantee the essential production condition and normalized management, thereby improve the product quality.
