摘要
对香肠乳杆菌的增殖培养基及培养条件进行优化研究。根据乳酸菌生长增殖的营养物质需求,对其增殖培养基成分中的氮源、碳源、生长因子及缓冲盐进行选择,通过正交实验对各成分之间的配比进行了优化,确定了增殖培养基的最佳组成。采用单因素实验对发酵菌株的培养条件进行研究,确定培养温度、培养方式、培养基初始pH等。同时根据乳酸菌发酵变化曲线,确定发酵16~18h为发酵最佳收获期。
The optimization medium composition and culture conditions for Lactobacillus farciminus were studied. Based on nutritional requirement for the growth of Lactobacillus farciminus, the enrichment medium of Lactobacillus farciminus was optimized. The effects of nitrogen source, carbon source, growth factor and buffer salt were evaluated by orthogonal design.And the medium composition concentrations were determined for maximizing the growth of Lactobacillus farciminus.By using single factor experiments,the optimum conditions for the strain were determined.And the LAB growth curve showed that 16-18h was the optimum time for harvesting.
