A new concept of adhesion coefficient is taken out to evaluate the pesticide residue in fruits and vegetables. Adhesion coefficient is defined as the maximum volume of pesticide liquid in per unit weight of different kinds of fruits and vegetables. The adhesion coefficients of 12 fruits and 19 vegetables are measured. The result shows the adhesion coefficients range from 0.0037 to 0.044 mL/g for fruits and from 0.0045 to 0.22 mL/g for vegetables. The bigger the adhesion coefficients is, the more risk of pesticide residue the fruits or vegetable is. The different risk level is settled. The fruits with the adhesion coefficient over 0.01 mL/g would relatively have the more risk of pesticide residue, and for vegetables the adhesion coefficient over 0.1 mL/g maybe relatively have the more risk. The initial residue concentration in fruits or vegetables is calculated and compared with the determined value. Calculation with adhesion coefficient provides a new way to estimate pesticide residue.
