摘要
采用国产超滤设备和果胶酶生产澄清型葡萄汁,利用40mg/L果胶酶预澄清处理葡萄汁后超滤,可以得到营养物质保留率高、透光率达到96.5%、澄清稳定。
To product clear grape juice,ultrafitration machines made in China and clarification enzymes have been used.After the treatment with 40 mg/L clarification enzymes and ultrafitration,the grape juice becomes clear with the clarity degree of 96.5% and steady with unique flavor and high untrient retention.
