摘要 抗性淀粉是一类不被健康人体小肠吸收的淀粉及其水解物的总称。介绍了国内外近年来在抗性淀粉结构、制备方法及应用方面的研究进展,以期推动我国淀粉研究的进一步发展,加快我国淀粉类农产资源的开发利用。 Resistant starch is floor board of non-assimilation starch and its hydrolysate by normal human small intestine. The research advance on structure, preparation and property of resistant starch was introduced in the paper, so as to push forward internal starch research and to accelerate exploitation and utilization of farm produce resource.
