介绍了碳酸饮料加工全过程中HACCP体系的建立,研究和讨论了碳酸饮料加工的HACCP系统核心部分——危害分析及关键控制点(CCP),并对HACCP执行中遇到的问题进行了探讨。
This article introduced setting up HACCP system during the whole processing steps of carbonated beverage. The HACCP system key part-hazard analysis and CCP were studied and discussed. At last, it was investigated with the problem brought during HACCP implementation.
