摘要
主要介绍了食品在加工过程中如何控制微生物污染,并通过控制食品中水分含量、食品pH值以及控制包装气体含量或气体成分、化学抑制剂等方法来控制微生物污染。
This paper mainly researches on how to control microbial contamination in food processing, and points out microbial contamination can he inhibited through controlling water content and PH value of food, gas content or composition of packaging and chemical inhibitor.
