摘要 通过对大豆蛋白适当的酶解,可得到大量具有各种营养保健功能的活性肽。介绍了大豆蛋白酶解产物的抗氧化、抗疲劳、降血脂作用机理和国内外研究进展,为大豆蛋白肽的深度开发利用提供参考依据。 The active peptides which have nutritional and healthy function can obtained through enzymolysis from soybean proteins. This paper introduced the action mechanism and recent advances of antioxidant, antifatigue and lipid-lowering of soybean peptides by enzymolysis and provide reference for deep exploitation and utilization of soybean peptides.
