This article focuses on the delection methods of trans-fatty acids, including infrared spectroscopy, gas chromatography, thin layer silver ion chromatography, gas chromatography quality spectrometry, high performance liquid chromatography, capillary electropharesis etc., and its nature, hazards, sources and control measures.
