综述了茁霉多糖的分子结构、性质、生物合成,并且简要叙述了茁霉多糖在食品工业中的应用。
The molecular structure, the characteristics and the biosynthesis of the pullulan were summarized. The paper gave a brief description of the application of pullulan in food industry.
