果汁掺假现象已成为影响果汁行业又好又快健康发展的制约因素之一。概述苹果汁中的不同掺假现象和掺假手段,并综述国内外苹果汁鉴伪技术及其研究进展。
Adulteration has been the limiting factor which will restrict the healthy and rapid development of fruit juice industry, The juice adulteration in different phenomenon and adulterate means were introduced, and the researching developments on identification technology of apple juice adulteration at home and abroad were reviewed in this paper.
