摘要
在鲜啤酒酿造过程中,适当添加桑葚汁,研制出桑葚保健鲜啤酒。实验结果表明,桑葚汁在后发酵至过滤前添加为好,添加量以3%~4%为宜。桑葚保健鲜啤酒兼具鲜啤酒和桑葚的风味及营养特点,长期适量饮用本产品,具有一定的保健功效。
Mulberry juice was added as auxiliary material to brew healthy draft beer. The result showed that the mulberry juice should be added between the steps of post-fermentation and filtering, and the adding amount of mulberry juice should be 3%-4%. The product had the characteristics and flavor of both draft beer and mulberry and was anticipated to be good to health.
