摘要
鲜骨含有人体需要的多种营养物质,但不易直接食用,利用酶法将骨胶原蛋白水解成胶原多肽不仅有利于人体消化吸收,也为鲜骨的增值利用找到新的途径。胶原多肽以其优良的功能特性已经越来越受到人们的青睐。简要介绍来源于鲜骨中的胶原蛋白及其活性肽的研究现状和利用状况。
