摘要
目的:了解仙桃市餐饮具消毒卫生质量,探讨其影响因素,提出改进建议。方法:大肠菌群纸片法,按国家规定的检测方法进行检测。结果:总体合格率为71.05%,学校食堂和大型餐馆合格率较高,中小型餐馆合格率较低,各类餐饮业单位、各类餐饮具、各年度的合格率都有非常显著差异。结论:应加强餐饮业餐饮具消毒监管力度,采取综合措施进一步提高餐饮具消毒卫生质量。
Objective:Getting knowledge of tableware disinfection of Xiantao, discussing its effect ion and proposing suggestion of improvement, nethods:Dectecting Coliform disk by using normal method. Results:The global passing rate was 71.05 %, passing rate of dining - room and large eatery was high and small eatery low. There were remarkable differences between various kinds of units. Conclusion: We should reinforce supervision for food industry and take integrate measure to improve quality of tableware disinfection.
