摘要
以蜀葵紫花为材料，对其红色素的提取工艺及性质进行了研究．正交实验结果表明：以水为溶剂、pH值为2、温度55℃是提取红色素的最佳条件．稳定性结果表明，其红色素水溶性好，对热稳定性较好，对光稳定性较差．
The extracting technology and character of red pigment in purple flower of holly hock were studied in the paper. The orthogonal test shows that the optimum condition of extracting red pigment from holly hock is pH Value 2, temperature 55℃ concentraction of alcohol 0. Properties of the pigment including photostability, thermostability,acid-stability and aqueous--solubility were examined also.
