摘要
将贮存3个月的大曲与贮存6个月的大曲分别以4∶6、3∶7、2∶8、1∶9配比使用,试验结果表明,使用贮存3个月的大曲与贮存6个月的大曲配比为1∶9的混合曲用于粮糟发酵其出酒率与酒质最佳。
The utilization of koji of storage for 3 months and six months with the ratios of 4： 6, 3 ： 7, 2 ： 8, 1 ： 9. is tested. The results show that the best quality is obtained at the ratio of 1：9.
