摘要
[目的]探讨不同饲养方式在提高肌肉品质中的作用,为优质鸡肉品质的调控提供理论依据。[方法]研究笼养、室内平养、草地散养3种饲养方式对河田鸡脂肪沉积与分配和肉质性状的影响,同时探讨肌内脂肪与肉质性状的关系。[结果]结果表明,在散养条件下,河田鸡脂肪沉积显著降低(P<0.05),其中对腹脂的沉积影响最大,肌肉剪切力、肌纤维直径显著高于笼养鸡和平养鸡(P<0.05),而pH值、滴水损失、烹饪损失、肌纤维密度显著低于笼养鸡(P<0.05)。肌内脂肪与肌肉pH值、剪切力、胸肌肌纤维直径呈负相关,而与滴水损失率、烹饪损失率、肌纤维密度和嫩度呈正相关。[结论]饲养方式对脂肪沉积与分配有显著的影响,笼养鸡的肌内脂肪、肌间脂肪、皮下脂肪、腹脂率显著高于散养鸡。
The objective of the experirnent is to explore the effect of feeding system on muscle quality of Hetian chicken and provide theoretical basis for regulating chicken meat quality. Hetian chickens lipid deposit and distribution and meat quality was assessed. The results showed that levels of Hetian chickens lipid deposit was significantly decreased in the free-range production system. The effect of free-range on the percent of abdominal fat (PAF) was higher than on the intramuscular fat (IMF). The free-ranged chickens had higher muscle shear force value (SFV) and musele fibre diameter and lower muscle pH, dropping loss, cooking loss and muscle fibre density ( P 〈 0.05). The relation between [MF and meat quality was that the IMF was negatively related with muscle pH, shear force value, breast muscle fibre diameter, but positively with dropping loss, cooking loss, muscle fibre density, and meat tenderness.
