摘要
从原料、生产工艺等方面讨论了影响大豆分离蛋白得率的因素并进行了分析,同时又提出了一些能提高得率的途径:①使用NSI指数高的原料;②料水比为1:9~1:10;③浸提温度在30~55℃;④浸出时间和pH应分别控制在30~50 min和6.8~7.2;⑤应用性能好的进口离心机;⑥消泡剂用量为原料量的0.02%~0.04%;⑦酸沉过程中pH值控制在4.2~4.6。
Factors effect yield rate of soy bean isolated protein from material,process were disscussed in production and some analysis about them were also made.meanwhile relevant ways to improve yield rate were put forward:(1)choose the material with high NSI index.(2) the ratio water and material is 1 : 9-1 : 10.(3)extract tem- perature is between 30-55 centigrade.(4) extract time and pH are controlled under 30-50 min and 6.8-7.2 respectively. (5)apply high performance imported decanter . (6) dose of defoamer is 0.02%-0.04% of the material weight .(7) pH is controlled between 4.2-4.6 in acid sedimentation.
