摘要 目的了解食物和营养素摄取对体格发育和学习疲劳产生的影响。方法整群抽取南京市中央路小学四年级的学生207名,用询问与记录相结合的方法,了解连续3日的食物摄取情况,同时测量身高、体质量,用剂量作业法和默字法了解学习疲劳产生的影响。结果与能量摄取量达到中国居民膳食营养素参考摄入量(DRI)者相比,能量摄取量低于DRI者,营养素摄取量、粮食、奶类、水产类食品摄取较低,身高、默对率和脑工作能力指数也较低,而能量摄取量高于DRI者,动物性、坚果类食品及产能营养素摄取较高,身高、体质量也较高,但默对率和脑工作能力指数较低。结论能量及营养素的摄取对体格发育、大脑活动有重要影响。 Objective To understand the effect of food and nutrient intake on the body development and fatigue during learning of the pupils. Methods A total of 207 pupils in the 4th grade of the Nanjing Zhongyang Road Primary School were selected with the cluster sampling method. Their food intake in 3 continuous days was investigated with the combined method of recalling and recording, and their body height and weight were measured, and the evaluation of learning fatigue was tested with the dose-work and writing from memory. Results Compared with the pupils whose energy intake was similar to the requirement of Chinese Dietary Reference Intake (DRI), the pupils whose energy intake was lower than DRI, their intake of nutrients and cereal, milk, marines was low, and their height, correction of writing from memory and the index of mental capacity were also low; the pupils whose energy intake was higher than DRI, their intake of animal food, nut and energy related nutrient was high, and their height and weight were also high, but the correction of writing from memory and the index of mental capacity were low. Conclusions The intake of energy and nutrients is very important for the body development and mental function,
