摘要
用分层碾磨的方法,对黑米的常规营养组成及其在米粒内部的分布情况进行了分析与研究,结果表明,除无氮抽出物外,黑米中其它营养成分均比普通稻谷的含量高。
Using the method of partial milling ,the author has made an analysis and study of the normal nutrients of the black rice and the distribution inside its seeds. The result shows that the black rice contains higher nutrients than the common rice, except that there is no extration of nitrogen . It is also found that the nutrient content of the black rice increases with the darkening of its colour.
