摘要
该研究采用核磁共振氢谱和磷谱定性和定量分析高纯大豆卵磷脂HLB值,建立求算HLB值得方程式HLB=21.4R,方便快捷求算出不同PC含量高纯卵磷脂HLB值;此法具有快速、灵敏、准确、无破坏性、需样品量较少等特点。
In this paper, The hydrophilic-lipophilic balance values of high purity soybeam lecithin have been studied qualitative and quantitative by means of 1^H NMR and ^31p NMR, and the equation of the HLB values has been founded： HLB = 21.4R. The Formula can calculate the hydrophilic-lipophilic balance values of different PC content of high puirty soybean lecithin. The method is rapid, sensitive, accurate, nondestructive and requires only small samples.
