摘要
研究了油菜花黄色素的提取工艺和防腐效果。通过正交实验确定了超声波提取法的优化工艺条件,即:提取溶剂为50%的乙醇水溶液(V/V)、提取时间为1h、提取温度为20℃、料液比(g∶mL)1∶10。在此条件下色素的提取率为98.84%,产品色价70.72。防腐实验表明:油菜花黄色素溶液浓度在0.05%以上对苹果原汁具有显著的防腐性,但经加热煮沸后防腐作用降低。
The technique of ultrasonic extraction for yellow pigment from rapeseed flowers and the antiseptic effect of the pigment on apple juice were studied. The relevant optimum conditions were determined with orthogonal experiments. The results showed that the optimum condition was using ethanol/water(V : V=5: 5) as the solvent, extracting lh at 20℃, and the gardenia fruit/solvent ratio 1 : 10. The yield and the color value of the extracted pigment achieved to 98. 84% and 70. 72, respectively. The study showed that yellow pigment in rapeseed flowers has significant antiseptic effect on apple juice at 0.05 % concentration levels, the effect was lost after boiled.
