摘要 护色保鲜是果蔬采后贮运中的关键技术环节,对于保持果蔬品质、延长贮藏保鲜期、提高人们的购买欲望、增加市场竞争力等具有重要作用。就目前影响果蔬非自然色泽呈现与发展原因进行分析,对采后果蔬护色保鲜研究和应用进行了系统探讨,并提出采后果蔬护色保鲜需要加强的关键技术,为果蔬护色保鲜深入研究和商业化应用提供参考。 The fresh and color keeping was the key part of techniques during fruit-vegetable storage and transportation, it played important role in keeping quality, prolong storage time, raising purchasing desire, increasing market competition. The study and application of fresh and color keeping of postharvested fruit-vegetable were systematically argued on the base of cause analyzing in fruit-vegetable unnatural color appearing and developing, and the key techniques required for postharvested fruit-vegetable fresh and color keeping were put forward to provide references for further studies and business application.
