摘要
水果(植物)采摘后作为生命活动主要标志的呼吸作用使复杂的有机物质在酶的作用下缓慢分解为简单有机物——醇类、酮类、醛类以及二氧化碳和水等,在这细胞代谢的生化过程中会产生微量的甲醛,认识这一自然现象在目前有着非常重要的现实意义。在广泛收集国内外资料的基础上,结合对我国常见水果甲醛本底值测定结果的分析,对水果甲醛自然含量进行了研究。
