摘要
以山药、糯米粉、白砂糖等为主要原料生产速冻山药饼,通过正交试验确定了速冻山药饼的最佳配方及生产工艺。
Quick-frozen Chinese yam pie is made from Chinese yam, flour of glutinous flee, sucrose and other ingredients. The prescription of quickfrozen Chinese yam pie and the production technology were determined through the orthogonal experiment.
