文昌鸡的研究进展与发展新思路 被引量:10

摘要 文昌鸡是我国海南省著名的地方优良品种.外貌体型呈现“三小两短”的特征.即体形方圆、头小、颈小、脚小及颈短、腿短。该鸡前躯窄胸浅、背短平、后躯发达特别是腹部容积大,外观呈U型.黄肤、黄胫。文昌鸡的体型决定了其单位体重体表面积相对较大.对高温耐受力较强.这与该品种所处的生态环境基本对应.具有适应炎热气候的特征。文昌鸡以其体型方圆.脚胫短细.皮薄骨酥.肉质嫩滑,肉味馥香,营养丰富,色、香、味、形、营养俱佳等特色.荣居海南“四大名菜”之首.在中外饮食文化的历史长河中已驰誉几百年。
