摘要
采用碘蓝法、降落值法及粘度法分别对不同水分、不同温度和不同人工气调处理的大米α—淀粉酶的活性进行测定,从而研究气调储藏对大米α—淀粉酶活性的影响.结果表明,在高温下,高水分大米气调储藏比常规储藏可以显著地减缓α—淀粉酶活性的下降,高CO_2处理的效果优于高N_2处理。降落值法是测定大米α—淀粉酶活性的最适方法。
Iodine-blue method, falling number and viscosity werd used to determine α-amylase in rice which were different moisture contents, temperatures and stored by CA treatments. The Result showed that the rice at high temperatures and high moisture contents CA storage could retard significantly lower of α-amylase activity compared with the rice under conventional storage. The effect of high CO2 was better than that of high N2. The falling numer method was the most appropriate for determination of α-amylase activity.
