摘要
研究了金钟花叶片色素的提取条件,并测定各种因素对该色素稳定性的影响.结果表明:40%酸性乙醇是金钟花叶片色素较好的提取剂,色素在酸性条件下较稳定,中碱性条件下有减色作用,短时光照或70℃以下较稳定,氧化还原剂、食品添加剂以及金属离子对该色素的稳定性的影响不显著.
The conditions for pignent extraction in the leaves of Forsythia Viridissima flower were studied, and the factors on the stability of the pigment were tested. It reveals that 40% acidulous grain alcohol is a suitable extraction solvent, The pigment is stable in acidic conditions, short light or below 70℃, and fades in neutral or basic conditions. Our experiment also reveals that redox reagents, food additive and metal ions don＇t show pronounced influence on the stability of pignent.
