示波极谱法测定食品中合成着色剂的抗干扰性的研究 被引量:23

摘要 示波极谱法测定食品中合成着色剂含量已被列为国家标准GB/T5009.35-2003的第3种方法,但在实际检测中,该方法只适用于成分比较简单的样品,对于成分比较复杂的样品,由于抗干扰性差,严重地影响着合成色素在滴汞电极上产生还原波,以致于无法进行测定。为此通过大量的试验分析,确定了样品中天然色素、脂肪、增稠剂等为测定的干扰物质,并设计了去除干扰物质的试验方法,在实际检测中收到了较好的效果。 Oscillopolarography has been specified as the third method in national standard GB/T5009.35-2003 for the detection of synthetic colorants in food. But in practical application, this method only fit for the analysis of simple samples not complex samples duo to the bad interference resistance of oscillopolarography which influencd the formation of reducing waves on mercurimetric electrode resulted in the intemuption of detection. With numerous experimental analyses, the crude pigment, fat and thickener were proyed to be interferential factors in detection. Furthermore, an experimental method was designed to remove the interforential components which acted well in practical application.
