摘要 目的:测定鹌鹑蛋中8种微量元素的含量,证明鹌鹑蛋中含有丰富的微量元素。方法:用湿式消化法对鹌鹑蛋蛋样进行处理,采用火焰原子吸收光谱法对处理后的鹌鹑蛋蛋样中的C a、M g、F e、Zn、Cu、M n、C r、A l等8种微量元素进行定量分析测定。结果:在鹌鹑蛋蛋样中,C a、M g、F e、Zn的含量较为丰富。但对人体有害的微量元素如A l也有一定的浓度。结论:鹌鹑蛋中含有丰富的人体所必需的微量元素,经常食用鹌鹑蛋可以补充人体对微量元素的需求。 Objective: To determine 8 trace elements in quail eggs in an attempt to prove rich trace elements in quail eggs. Methods: Quail eggs were treated by wet digestion, and after that, the 8 trace elements of Ca, Mg, Fe, Zn, Cu, Mn, Cr, and Al in the quail eggs were determined by FAAS. Results: Quail eggs had more Ca, Mg, Fe and Zn that were beneficial to health, and had also some Al that was harmful to health. Conclusion : There are rich necessary trace elements in quail eggs, and often eating quail eggs can supply trace elements to the body.
