摘要
文中对东北虎的骨骼肌进行了测定,结果:含水率为67.84%～70.36%;蛋白质含量为19.85%～34.21%,相当于干样品重的80.00%～95.06%。混合样品中脂肪含量为12.02%;17种氨基酸的总和是26.84%,即为干样品的86.86%;6种脂肪酸含量的总和是4.5%。上述结果证明东北虎骨骼肌具有较高的生物学价值。
Many kinds of composition in skeletal muscle(SM)from Siberian tiger had been determined.The results are that the content of water is 67.84%～70.36%, of protein is 19.85%～34.21% or 80.00%～95.06% of dried SM,of fat 12.02%, the total amount of 17 kinds of amino acid is 26.84% or 86.86% of dried SM,the total amount of 6 kinds of fatty acid is 4.5%.
