摘要
建立了浸入式固相微萃取-气相色谱法(IM-SPME-GC-MS)测定葡萄酒挥发性成分的方法,并对萃取条件和色谱条件进行了优化;对宁夏贺兰山东麓地区赤霞珠葡萄酒挥发性成分进行了测定。该方法简便、快速、精确,适合葡萄酒挥发性较强成分的测定;分离鉴定了葡萄酒中20种主要挥发性成分,其中异戊醇、乙酸乙酯、D,L-2,3-丁二醇、内消旋-丁二醇、琥珀酸二乙酯、醋酸、2-羟基丙酸乙酯、苯乙醇等物质占主要比例。
The detection of volatile constituents in grape wine by IM-SPME-GC-MS had been developed and the extraction conditions and chromatography conditions were optimized. Furthermore, the method was used to determine the volatile constituents in cabernet sauvignon grape wine made in Helanshan Ningxia. The method was simple, rapid, and accurate and especially suitable for the detection of components of strong volatility in grape wine. More than 20 kinds of volatile constituents were isolated from grape wine and identified as follows (the main constituents): isoamyl alcohol, ethyl acetate, D,L-2,3-butanediol, internal compensation- butanediol, diethyl succinate, acetic acid, 2-ethyl hydracrylic acid, and phenethyl alcohol etc.
