摘要
对优质红葡萄酒品种蛇龙珠在不同采收期的成熟度、重要酚类物质、单宁等进行研究。结果表明,不同采收期葡萄的成熟度不同,随含糖量的增加,成熟度不断增加;影响葡萄皮色泽的主要因素是花色素,在葡萄成熟过程中,花色素含量不断增加,使葡萄皮色泽加深;不同采收期,葡萄所含总酚、单宁及葡萄皮的着色度随着葡萄的日渐成熟,而不断增加、颜色不断加深;白藜芦醇的生成量与葡萄的成熟度呈负相关性;试验中采收葡萄的成熟度最大值为35.66,葡萄汁总酚含量为246mg/L,单宁含量为318 mg/L,多酚含量达到21.72mg/L。(孙悟)
The maturity, important phenols, and tannin of quality claret species Cabernet Gernischet in different harvesting time were studied. The results indicated that there was difference in maturity of grape in different harvesting time (with the increase of sugar content, maturity enhanced). Anthocyanidin was the main factor influencing grape color. Anthocyanidin content kept increasing during the ripening process of grape fi'uits, which deepened grape color. The total phenols, tannin and pigmentation degree kept increasing with the ripening of grape fi'uits. The yield of resveratrol had negative correlations with grape maturity. The maturity of grape harvested on Oct. 19 in the experiment achieved the maximum value as 35.66, total phenols content reached 246 mg/L, tannin content reached 318 mg/L, and polyphenols content reached 21.72 mg/L.
