摘要
对天然放牧条件下1.5岁~5.5岁牦牛的屠宰试验表明:牦牛在3.5岁时屠宰最适宜,其眼肌面积、屠宰率、净肉率和肉骨比高,分别为38.1 cm^2、54.35%、41.5%和3.77:1;其肉粗蛋白含量高,粗脂肪含量低,粗纤维和不溶性膳食纤维含量适中,肉质鲜嫩、口感好.
The slaughter test of 1.5 to 5.5 years old yaks on grazing shows that the optimal slaughter time for yak is 3.5 years old and its Loin eye Area (38.1 Cm^2), slaughter rate(54.35%), net meat rate (41.5%) and the rate of meat to bone(3.77 : 1) was higher; the CP of meat is high and the EE is low, the CF is suitable and the meat tastes good.
