摘要
对番茄渣、番茄皮成分进行了分析,并测定了总膳食纤维含量,探讨了番茄膳食纤维在食品加工中的应用,并指出其广阔的应用前景.
This paper analyzed the components of tomato dregs and tomato peel . The content of general dietary fiber was measured. The application of tomato dietary fiber in food processing was discussed ,and its application perspective was also introduced.
