摘要 钙蛋白酶系统主要是由钙蛋白酶类和钙蛋白酶抑制蛋白组成。钙蛋白酶细胞内主要的蛋白水解酶,参与神经发育、肌纤维降解、信号传导等过程。因此,钙蛋白酶系统在肌肉生长、改善肉的嫩度及治疗某些疾病等方面起着重要的作用。本文主要就其成员、结构、功能等方面作一综述。 Calpain system consists of calpains and calpastatin,Calpains are the major proteolysis of key cellular components,which involves varied processes such as nerve growth,muscle homeostasis and signal transduction.So the calpain system plays an important role in the muscle growth,improving meat tenderness and curing some diseases, The family members, the structure and functions of calpain system were reviewed.
