摘要 木薯块根贮藏物质主要是淀粉和蛋白质。本文简介对木薯的栽培育种、木薯淀粉的市场需求、木薯淀粉颗粒形貌特征、交联木薯淀粉、木薯淀粉深加工等方面的研究进展,回顾了木薯贮藏蛋白、特别是营养贮藏蛋白结合木薯块根发育方面的研究,并提出将来木薯贮藏物质的研究以及木薯品种改良的一些新思考。 The main storage materials of cassava are starch and protein. The cultivation and breeding, market requirement, morphology, cross-linked starch and starch machining of cassava were described in this paper, and at the same time the protein storage in cassava, especially the vegetative storage protein (VSP) and the growth of cassava root-tubers were reviewed. Furthermore, put forward were some suggestions for the research of storage components in cassava root-tubers and of the improvement of cassava varieties at a molecular level.
