摘要 本文就维生素E的抗氧化机制、肉制品脂质氧化的发生以及近年来有关日粮中添加维生素E对牛肉脂质氧化的改善作用的报道等方面进行了综述。 The objective of this review aimed at providing the mechanism of antioxidant, the formation of lipid oxidation of meat and the reports discussing dietary vitamin E supplementation for improvement of lipid oxidation of beef in recent years.
