摘要
二氢杨梅素具有优异的抗氧化活性,开发利用前景广阔,其通过螯合金属离子起到抗氧化作用。本研究利用这一性质,制备了二氢杨梅素-铁螯合物,同时测定此螯合产物的抗氧化活性,结合量子化学计算,认为制备的二氢杨梅素-铁螯合物对其抗氧化活性影响很小,这种螯合物作为铁强化因子在油脂体系中有实际应用价值。
Dihydromyricetin has good antioxidant activity and bright prospects to be explored and used. Its antioxidant activity embodies by chelating metal ion. The paper studies the preparation of Fe- DMY chelate and determination of its antioxidant activity. It's concluded that the antioxidant activity of Fe-DMY chelate is similar to that of DMY itself, The same conclusion is drawn from quantum chemistry computation. Fe-DMY chelate as Fe supplier used in grease system has realistic value.
