我国食醋生产工艺多样,食醋品种齐全,酶制剂在食醋生产中应用还处于应用开发阶段。主要论述了酶制剂在食醋生产的原料处理、糖化、酒精发酵和醋酸后熟发酵中应用技术和控制措施,酶制剂在食醋生产中应用将得到大力的发展。
