摘要
非硫法人工烘制金黄葡萄干,工艺流程短,产品不褐变,不含残硫,试验结果认为,配方A处理液,处理温度85℃,处理时间15min。
This paper has proposed a new technology that dehydrates golden raisins by means of non sulphitation. The golden raisins dried by this method showed no brown and no sulphurdioxide remained. The processing period is shortter than that of sulphitation fumigating. The former was 20 h, and the latter was 40 h. The experiment results showed that the optimum parameters of non sulphitation method in golden raisins processing are as follows: prescription A treatment solution, treatment temperature 85℃, treatment time 15 min, and drying temperature 65℃.
