摘要
对确定冻结食物解冻时间的各种方法,尤其是有实用价值的简易计算法,以及对这些方法的评价作了综述。
In this paper the methods of predicting thawing time for foods, especially the simple methods including various analytically, semi analytically derived and empirical formulae, generalized graphical method for foods of regular and irregular simple or multi dimentional shapes, and the criteria and procedure for appreciating them are reviewed.
