摘要 提出了利用原花青素的抗氧化力测定原花青素含量的电化学新方法.在pH=8.33的Tris-HCI-邻苯三酚体系中,加入原花青素后,邻苯三酚于-0.96V(vs.SCE)处的还原峰电流减小,且峰电流的减小量与原花青素加入量在10~100μg/mL范围内线性相关,检出限为4 μg/mL.经多种电化学方法证明该波为不可逆吸附波,并讨论了电极反应机理.该法已用于保健食品中原花青素的含量测定,重现性好,结果满意. A new method of electronic chemistry is proposed to determine Oligometric Proanthocynidins (OPC) by means of its proof-oxygenence in the paper. In pH=8.33 Tris-HCI butter solution containing Pyrogallol ,the peak current of Pyrogallol at the potential of -0. 96V (vs. SCE) is on the decrease after added OPC. Meanwhile, the decease is linear to the content of OPC in the range of 10-100μg/ml with the detect limit of 4μg/ml . It proves that the wave is a irreversible absorptive wave through various electrochemcal methods. The mechanism of elec-polo reaction is analyzed . The new method has been applied to determine OPC in restoratives with a satisfactory result.
