摘要
为了能用数值仿真来研究干燥过程中果蔬的形状变化,先用试验方法获得了小块果蔬体积收缩率与它的含水率变化之间的关系,然后将这一关系应用于果蔬内部每一质点,推导建立了球形果蔬边界的收缩方程,并对所获得的方程进行了试验验证,表明获得的方程可信。
To numerically simulate a drying process of fruit, we studied the shape change of a fruit during drying and derived an equation for volume shinkag of fruit. In this paper, through drying experiments the relationship between volume shrinking rate of a small piece of apple and its moisture change were investigated. Based on the knowledge boundary shrinking equation, which was then verified correct by obtained above we deduced a experiments.
